My ex partner left the house. We both own it. I now want to take out a policy for the building and contents. She does not speak to me any more and so in the event of a claim does the Insurance company or myself have to require her to sign any documents.

Home insurance policies are set up in the name of the registered owners of the home. Whoever is listed on the title can sign documents to set up an insurance policy. It would be in both your and her interest to set up insurance on the property to protect it from a loss. I would suggest you consult your lawyer on how you go about doing this.
